Wonderful Omelette
3 eggs Toast bread, cut into croutons and then fry in butter until nicely brown and smelling good Peel and dice apple and then sauté in butter and when almost done add chopped nuts Combine croutons with apple/nut mixture and set aside in bowl. Beat the eggs and cream. Add butter to pan and when melted add eggs (over medium heat) As eggs begin to set, lift corners with spatula so uncooked eggs will run to bottom of pan. To make sure it does not stick, shake the pan a bit. Just before everything sets up, add the goodies in the bowl on one half of the omelette along with the cheese and fold over the other half. Let it sit for a short time so that the flavours can blend and then serve. It might take you a time or two to come up with the best combinations and depending on what’s available in the ice-box. You could also add a bit of ham, etc. to give another dimension. |
