Jan's Borscht

This one is so simple and light! It’s not traditional, but even my Polish relatives like this borscht. The red beets, combined with the white yogurt, and beet greens make it wonderfully colourful.

Ingredients:
4 or 5 beets, grated
4 cups water (soup stock, vegetable or chicken, also works well)
4 tablespoons soy sauce
1 cup chopped beet greens
1 teaspoon dill weed
¼ cup chopped green onions or chives
Salt and pepper to taste
Garnish: plain yogurt or sour cream

Preparation:
In a soup pot, bring water, beets, soy sauce to a boil. Reduce heat, cover pot, and let simmer for 10 minutes.
Add beet greens, dill and green onion, and simmer for another 10 minutes.
Serve hot or cold with a spoonful of yogurt in each bowl.
