Yaya's Soup Avogolemeno
by Marianne Micros and Tim Struthers

Put 3 cans of condensed chicken broth and 4 ½ cans of water in a large pot. Bring to a boil.
Add 1 cup of rice.
In a bowl, beat 3 eggs. In another bowl, put the juice of 2 lemons. Add the lemon juice to the eggs and beat together.
When the rice is cooked, get someone to help you. While you are beating the egg-lemon mixture, your partner will slowly add broth from the soup (which you have now turned down to warm) little by little. Fill the bowl with the broth and keep beating. Then pour the mixture in the pot or soup.
The soup will be nice and frothy -- and ready to serve immediately.
